Chilled asparagus

* 3 c. unsalted butter 150g
* (3 / 4 cup) very finely chopped onions
* 600g green asparagus stems finely minced
* 375 ml (1 cup) cold water
* 125 ml (1 / 2 cup) cream 35%

Melt the butter in a saucepan and sweat the onions. Add asparagus and sweat to bring out their water from vegetation. Add water and simmer until asparagus are tender. Put everything in a blender and return soup to boil, stir in cream and salt. Cool before serving. Use only the portion of the tail of the green asparagus tender. Book tips for another use. Can garnish of asparagus tips cooked in boiling salted water.
